A fusion of modern Asia, Europe and Australia influences the menu and is structured so that diners can enjoy an all-day meal, moving from light bites such as succulent prawn toast served with a Tasmanian wild crab meat salad or Beluga caviar served with sour cream. , chives and potato wafer, before moving on to more substantial mains, including grilled Brooklyn Valley sirloin with lime, chili and burnt leeks, or healthy seared tuna with black bean tabbouleh and corn grilled dwarf.

A separate signature main course designed for two or more guests is a two-day dry-aged Wollemi duck which is served in a fragrant Indonesian curry style with crispy skin and a creamy coconut sauce, topped with crunchy vegetables and Asian spices of garlic, ginger and star anise.
