Bennington’s Village Garage opens new tasting room, ribbon cutting, March 27

Brand new Bennington Distillery features a spirits-infused menu showcasing local suppliers

Vermont Business Magazine Village Garage, a new distillery in Bennington making craft spirits from Vermont corn and rye, proudly announces the opening of Servicenter at Village Garage Distillery, a spirit-infused restaurant and tasting room showcasing the local suppliers. With the kitchen led by Chef Jonathan Studley, whose roots in the hospitality industry span 40 years, Servicenter offers an extensive menu including small plates, salads/bowls, bar snacks, entrees, sweets and a children’s menu. The bar and tasting room experience is led by Alexander von Pfieffer, former manager of some of New York’s best craft cocktail bars. Opening hours are Thursday to Saturday (5pm-9pm) and Sunday (12pm-5pm).

“I’m proud and excited to be opening the Village Garage Distillery restaurant, with a great team working together to make Vermont whiskey a category in its own right,” says Chef Jonathan. He works with locals to source ingredients featured throughout the menu, such as vertically grown greens, artisan mushrooms, Vermont cheeses, and other items that will rotate seasonally. Even the spent grains from the distillation process are supplied to local farms to feed the livestock which will then be featured on the menu, further combining the distillation and culinary experiences.

Menu highlights include:

mac bourbon made with a blend of Vermont cheeses

Homemade poutine with neighboring Maplebrook cheese curds (three miles from the distillery)

Charcuterie board with local meats and cheeses, pickled onions, olives, spiced nuts, stone ground mustard, fig jam and crusty bread

Grilled Cheese for adults made with assorted regional cheeses, caramelized balsamic onion, crispy apple slices and pork belly served on grilled waffles

Bourbon Barrel Roasted Salmon brushed with bourbon BBQ sauce and roasted on repurposed barrel boards

Chef Jonathan is a longtime member of the American Culinary Federation and the Midwest Representative to the American Institute of Food and Wine. Chef Studley began his career in the hospitality industry in the mid-1970s at his family’s three-star French restaurant in New York. City, La Colombe D’Or. He trained with master chef André René at the former Windows On The World atop the World Trade Center and served as executive chef at Kula Lodge in Maui, the Magnolia Inn in Pinehurst, North Carolina, and the restaurant and The Long Wharf terrace in Sag. Alex von Pfeiffer, a new transplant from New York’s craft cocktail bar, Employees Only, is the head of guest experience at the Village Garage Distillery. Alex previously helped set up and lead the efforts of Amor y Amargo, Due West and Blacktail in New York, and brings his experience as a live sound engineer and UK tour manager. , Europe and Australia. The cocktail menu features a variety of riffs on classic cocktails, such as the Village Maple Walnut Old Fashioned, Razerac (Village Rye and homemade raspberry liqueur), and the Nor’Easter (Village Vodka, milk, homemade coffee liqueur, maple syrup). A tasting flight of Village Bourbon, Rye and Bonfire is served in real hand-sandblasted staves from a cask in which the whiskeys were aged.

“It has been exciting to develop this cocktail menu, which showcases in-house produced spirits and liqueurs and complements the craftsmanship evident throughout this project,” says Alex. “The menu offers build-it-yourself dishes old-fashioned and high ball experiences that encourage our customers to experiment and be creative here at the bar and keep them going with the bottles they bring home.

The illustrative menu was drawn by local architect Geoffe Metcalf of Keefe & Wesner Architects, who also helped bring the Village Garage Distillery to life.
