New underground bar hides in library at Seattle’s Fairmont Olympic hotel


You may remember it, but earlier this year the bar at the Fairmont Olympic hotel got a makeover. And part of that series of whimsical renovations included a hidden underground bar. If you are looking for an unforgettable evening of drink, history and design, a trip to the Founders Club may be in order.

Upon entering the Olympic Bar, you will be surrounded by nearly a century of history. Expect to see beautiful heirloom details along with modern, fresh accents for a truly unique space. To make things even more unique, the bookcase that lines the wall is more than it looks, it’s the entrance to the Founders Club, a hidden underground bar.

The intimate space can only accommodate 30 people and is inspired by the underground bar culture of the 1920s. The look is defined by rich, deep wood tones and the soft glow of polished brass. Expect something whimsical and warm with a lot of gravity and a mysterious energy. Not only is this a beautiful space, but it also features an exquisite collection of spirits hand-picked by award-winning Fairmont Olympic beverage curator Jesse Cyr.

On the menu, you will find innovative cocktails specific to the Founders Club such as Cafe Racer with Cognac Camus VSOP, Le Verger, Lemon, Yuzu and Grapefruit Bitters.
