Sullivan’s Steakhouse to open in the US Steel Tower in downtown Pittsburgh


This is the sizzle of Sullivan’s Steakhouse.

The steaks are cut by hand and served juicy and tender.

French onion soup overflows the bowl of cheese.

Crunchy salads are topped with a homemade blue cheese vinaigrette

A generous side of mashed potatoes is creamy buttermilk and garlic.

An old fashion is placed in a smokehouse to enhance the aroma of the drink.

The hot fudge is drizzled with ice cream served at the table.

“We want to create the ‘Wow’ factor for our customers,” COO Ken Hoffman said Thursday as he sat in the restaurant lounge at the US Steel Tower in downtown Pittsburgh. “We are here training to be perfect. It’s about being consistent from day one.

The 600 Grant St facility is slated to open this month. Hoffman did not reveal an exact date. The 7,600 square foot space will be the second location in Pennsylvania and the 13th in the United States. The other restaurant in Pennsylvania is in King of Prussia. The company hired 115 people out of 700 candidates. The property signed a lease in June.

“People ask why we want to open a restaurant during a pandemic,” Hoffman said. “We found out that this space was available. This is an amazing property in an iconic building. We couldn’t let this go. Pittsburgh is a vibrant city that has changed. The food scene here is amazing. We want to be part of it. “

Sullivan’s Steakhouse, founded in 1996, is renowned for its hand-cut steaks, fresh seafood and signature cocktails. The company – Sullivan’s Steakhouse is owned by the Dividend Restaurant Group – celebrates its 25th anniversary. The US Steel Tower celebrated its 50th anniversary of completion on Thursday.

The restaurant’s name was inspired by John L. Sullivan, an unarmed boxer in the late 1800s. There are photos of him everywhere, including a fight in Pittsburgh. Sullivan’s mission was to be “the best of the best,” Hoffman said.

The lounge and bar are black and burgundy. There are high tables and bar seats with outlets, USB ports, and Wi-Fi for guests. A large “S” logo is made of steel.

There are wine racks. A temperature-controlled wall holds 1,100 bottles of red wine. The white wines are housed in another domain. The choices come from all over the world.

Plans include alfresco dining. They will also have live jazz music.

Three private dining rooms – The Champion Room, The Victor Room and The Steel Cellar – inspired by the city’s professional sports teams.

The accommodation capacity is 250.

“We want to create a relaxed atmosphere and provide high quality service,” Hoffman said. “It’s about the experience. We do things big and small differently. We were told this town wanted more downtown restaurants. We hope to bring new enthusiasm to the city.

General Manager Michael Rudman has 28 years of restaurant experience including Morton’s of Chicago, Monterey Bay and Eddie Merlot’s. Executive Chef Paul J Morrison III has been involved in the Chicago restaurant scene for 20 years.

“Our chef brings a lot of credibility to the table,” Hoffman said.

Morrison worked for his childhood hero Michael Jordan at Michael Jordan’s Steakhouse in Chicago and Connecticut, as well as the MJ23 Sports Bar and Grill at the Mohegan Sun Casino. A native of Carnegie who lives in Mount Lebanon, Morrison is happy to be home, he said.

“Today is the happiest day of my life,” Morrison said. “It’s great to be at home. Being able to work in this iconic building and with my Irish family heritage is a special opportunity for me. I worked with the entrepreneur. I am not just a cog in a wheel.

Morrison suggested a Beef Wellington appetizer and they will serve it in any restaurant, Hoffman said. Other appetizers include cheesesteak eggrolls, jumbo shrimp cocktail, and oysters on the half-shell. The soups are made with French onions and shrimp and lobster bisque. The salads include a wedge of iceberg lettuce and spinach and Caesar. Brussels sprouts, fresh asparagus, three-cheese macaroni and cheese, and steakhouse wild mushrooms are side dishes.

The main steak choice is Filet Mignon, Rib Eye, and New York’s First Tenderloin.

Signature cocktails include a ‘Knock Out Martini’, inspired by Sullivan, as well as an espresso chocolate martini and a retro grasshopper with Jameson Irish whiskey.

Sullivan’s will feature lunch, a daily happy hour at 3 p.m. with a $ 7 bar bites menu, and monthly specialty dinners.

Dividend Restaurant Group was looking to open a restaurant in the heart of downtown Pittsburgh, Nishant Machado, president and CEO, said in a statement.

“And when the chance to bring our classic American cuisine to Steel City presented itself, we knew we had to jump on it,” Machado said. “We are thrilled to be a part of Pittsburgh’s vibrant dining scene and eager to introduce patrons to our take on traditional steakhouse dishes.”

Hours of operation will be 11 a.m. to 10 p.m. Sunday to Thursday and 11 a.m. to 11 p.m. Friday and Saturday
