Yes, Chiefs! Glowbal Restaurant Group Adds All-Star Talent to Vancouver Culinary Team and New Black+Blue Location in Toronto


Glowbal Restaurant Group celebrates its 20th anniversaryand anniversary by adding a group of five accomplished chefs to the roster that will bolster Glowbal’s already stellar culinary reputation at its Vancouver restaurants and in a new Black + Blue location is set to open in the heart of Toronto’s financial district this summer.

Headlining Glowbal’s list of new kitchen acquisitions is Michelin-starred international talent Stefan Hartmanwho assumes the role of Culinary Director for new and upcoming Glowbal restaurants and will also oversee group operations Five Sails Restaurant at the Pan Pacific Hotel. Hartmann recently led the opening team at Highway Osteria Vancouver House and served as Regional Executive Chef at Tacofino for more than three years.

Originally from Uelzen, Germany, Hartmann honed his skills in some of Europe’s most famous restaurants before opening the eponymous Hartmann’s in Berlin, where he was awarded a prestigious Michelin star in 2010. His comprehensive resume and well traveled also includes tours as a restaurant consultant and owner of establishments in Los Angeles, Mexico and Berlin before coming to Vancouver and serving as executive chef at the former Bauhaus Restaurant in 2015.

Also joining the team of Glowbal Chefs is Denis Peckham, who will work on developing culinary operations at Black+Blue in Toronto later this year. Peckham’s resume includes stops in Vancouver Restaurant Light and Notch8 Restaurant & Bar at the Fairmont Hotel Vancouver as well as the Michelin-starred Californian restaurant The French Laundry. Food TV fans may also recognize Peckham’s name from his win on The Food Network Canada. Chopped Canada in 2016 and as a competitor on Top Chef Canada in 19.

To complete the new team of five Fernando Burgueswho has worked alongside starred chefs in the UK (Roux au Landau, Le Wolseley) and Spain (El Serbal, Casona del Judio) and was promoted from Executive Sous Chef at Glowbal Restaurant to Executive Chef at Rating; Robert Robinson (Vancouver’s Le Crocodile, West, Bacchus Restaurant, Toronto’s Canoe Restaurant) who now takes on the role of head chef at Five Sails Restaurant at the Pan Pacific Hotel; and Ron Straton (Habits Gastropub de Toronto, &Company Resto Bar, Figures Restaurant and the famous Centro which brought David Lee, Marc Thuet and Michael Bonacini to Canada)who took the reins this year at Black+Vancouver Blue as chief executive.

Glowbal began bolstering its back-of-house team last year when it welcomed the acclaimed chef Alex Kim to his team as Executive Chef to its flagship Bright restaurant after his three-year tour as head chef at the former MARKET by Jean-Georges at the Shangri-La Hotel Vancouver. After immigrating to Canada as a teenager, Kim worked at several of Alberta’s top luxury hotels, including the Fairmont Chateau Lake Louise and the Fairmont Hotel MacDonald, before coming to Vancouver to pursue her culinary career in 2017.
